Amazing Ecuadorian Style Red Onion Salsa


A brilliant accompaniment to any barbeque or tandoor dish. The Ecuadorian style salsa is versatile and gives that much required kick. I served this with Tikka dishes and loved it!

Ingredients
2 large      Red onions
1 medium   Green bell pepper, julienne
1 medium   Red bell pepper, julienne
1               Lemmon, juice
2 large      Tomatoes
½ bunch     Fresh Coriander, finely chopped
1 tbsp       Olive oil
1 tsp         Sugar      
                Salt
                Pepper corns, freshly ground

Method
1.      Slice onions into thin rings. Separate layers and tip them into a large mixing bowl. Add the sugar and 1 tsp salt. Add ½ cup water to this and let it stand for an hour or so.
2.    Drain the water. Squeeze out the water from the onion rings and transfer to your salad bowl.
3.    Tip in the bell peppers, freshly chopped coriander leaves, tomato chunks. Add in a splash of olive oil and lemon juice; mix well and voila--You have it… Ecuadorian Style Red Onion Salsa!
